Trachanas Andritsaina with crushed red pepper

Rich soup with a nice combination of artichokes with crushed red pepper and tsipouro.

Serve as an appetizer.

  • Step 1: Prepare the trachana. Heat the olive oil and add the onion, artichokes, mushrooms and sauté for 5 minutes until wilted and colored.
  • Step 2: Add the trachana and saute for 2-3 minutes until glossy.
  • Step 3: Extinguish with the tsipouro and let it evaporate for 1 minute.
  • Step 4: Then add salt, the crushed red pepper and the broth little by little until the trachanas are cooked and come out mushy.
  • Step 5: Remove from the heat and add the butter and parsley. Stir and serve immediately.
